Seafood restaurant Eddie V’s sets opening date for MarketFair

Eddie V’s, a chain that is known for seafood, steaks and “theatrical cocktails,” is is set to open Friday, June 6, in MarketFair in West Windsor.

The restaurant’s culinary style is described as “classic American with a touch of modern Asian.” Signature menu items included Chilean Sea Bass Steamed Hong Kong Style, Parmesan Sole and Crab Fried Rice.

The V Lounge is the backdrop for nightly stage performances nightly by local musicians as well as the setting for the Cocktails With Attitude menu.

Drinks include the Smoked Old Fashioned, which is torched tableside on a wooden plank, with smoke captured in a glass; and the Hope Diamond, which changes color from deep blue to magenta. A walk-through wine tower made entirely of glass houses the restaurant’s wine and champagne selection of more than 300 labels.

Eddie V’s in Princeton will be located at 3535 US Highway 1, Suite 100-C, in MarketFair. The new restaurant is 6,659 square feet, including four private rooms for events. The dining room will be open seven days a week for dinner: Monday through Saturday from 5 to 10 p.m., and Sunday from 5 to 9 p.m.

The V Lounge will open an hour early each day at 4 p.m. and serve Happy Hour Sunday through Thursday from 4 to 6:30 p.m. Live music performers are set to perform nightly on Sunday from 6 to 9 p.m., Monday through Thursday from 7 to 10 p.m. and Friday and Saturday from 7 to 11 p.m.
