Nomad Pizza, a popular purveyor of wood-fired pizza known for its commitment to fresh, local and organic ingredients, has officially opened its third location in Lambertville.
The new restaurant on Canal Street marks a notable expansion for the acclaimed eatery, which previously operated only in Mercer County, with locations in Princeton and Hopewell.
Nomad Pizza began in 2006 as a mobile, wood-fired pizza business using a distinctive 1949 REO Speedwagon truck. Partners Tom Grim and Stalin Bedon founded the venture, which evolved from Grim’s home pizza-making hobby into a full-fledged enterprise.
The truck originally catered private events, and growing demand led to the first brick-and-mortar location in Hopewell in 2009. A second New Jersey location opened in 2016 in a renovated Amoco gas station at the Princeton Shopping Center.
The Lambertville location has taken over the former home of The Local Greek, located behind Greene Street. The space has been extensively renovated to reflect Nomad Pizza’s signature ambiance and operational style.
A key feature of the new restaurant is a state-of-the-art wood-fired oven, reportedly capable of baking up to 20 pizzas at once.
Nomad Pizza has built a loyal following around its “Fresh. Local. Organic.” philosophy, evident in its carefully sourced toppings and thin, charred crusts.
The Lambertville menu features nearly 20 varieties of wood-fired pizza, including customer favorites such as the classic Pepperoni, the unique Tartufo (topped with shiitake mushrooms, caramelized onions, bufala, farm egg and black truffle oil), and the vibrant Arugula.
Other selections include Spicy Sausage, Sassy Vegan, Shiitake Mushroom, Classico and Anchovy. For dessert, the Nutella Pizza—topped with fresh fruit and powdered sugar—is also available.
The restaurant held a soft launch ahead of its official debut on Thursday, July 10. A vintage pizza truck, positioned outside, reflects Bedon’s original passion for the craft and adds a nostalgic touch to the welcoming, wood-fired ambiance.
