Chef Salvatore Riccobono of Princeton University’s Whitman College visited the Waldorf School to teach a cooking lesson on March 10.
As part of the students’ regular gardening class, led by teacher Suzanne Cunningham, the students prepared a meatless entree using seasonal ingredients.
The class of 10 first tackled reading a recipe, in this case Riccobono’s own White Bean, Kale and Sweet Potato with Leek Pesto.
Students spilt into three groups — team pesto, team kale and team sweet potato — then rolled up their sleeves to julienne, sauté, chiffonade and puree their way to a colorful superfood salad.
In addition to knife safety, sanitation principles and plating, Riccobono also covered how to assemble a dish, how different flavors work together and how to personalize to taste.
Each year, the Waldorf School of Princeton gardening program invites a special guest to present to the eighth grade.
Gardening, farming and sustainability are integral parts of the Waldorf curriculum, which is used in more than 1,000 schools worldwide. Waldorf School of Princeton is the only Waldorf school in New Jersey, offering programs for children from 18 months to eighth grade.
