Sumo Sushi has been on Pennington’s main street for eight years, serving up big portions of bold tasting sushi.
And while it may take many visits to reach the girth of a Japanese wrestler, Sumo Sushi’s philosophy is to never leave patrons unsatisfied.
Charlie Yeh, head chef of the family owned Sumo Sushi, says that the experience of being at the location for so long has given him a feeling for what customers are looking for.
“We try to give the customer a fair amount of food because we believe that volume is important as well as the quality,” said Yeh, as he also complimented Pennington. “It’s very personal here and cozy. It’s a small little town but everybody makes us feel welcome.”
Yeh as he emphasized that being in Pennington allowed them to price their product lower because of being able to avoid the higher rent of an area such as Princeton.
When it comes to sushi, it’s all about the fish.
At Sumo Sushi, they know that as well as anyone, and so the fish are delivered fresh daily. Many of it is same quality one would find in a high end New York Sushi restaurant. For a place that goes through about 100 pounds of tuna and 80 pounds of salmon a week, that’s a lot of deliveries.
“There is no short cut to serve here, we specialize in sushi and our fresh fish is the most important thing for us and that attracts most people here, because once they try it, they know the quality is there,” Yeh said.
When holidays come around, Yeh cranks up the creativity by making unique and delicious dishes for devoted sushi enthusiasts. By St. Patrick’s Day, they make a sushi roll in the shape of a clover, for Easter, a rabbit, and for Valentines Day, well that’s a no brainer.
“We came out with a roll called an ‘I Love U Roll,’ it’s basically a spicy tuna roll with avocado in them, and tuna, and salmon around them in the shape of a heart,” Yeh said.
“People love that, because it’s something different that you don’t see in other restaurants around here.”
